What are you injecting with and do you inject every brisket?

Almost all of them. If I'm cooking low and slow wrapped in paper it seems to really help it from drying out. Not as important if cooking in a foil pan with liquid but still finds it adds a depth of flavor I enjoy. This is the good stuff.

Last night before it went on at 11pm
11 hours later at 10am I wrapped it in paper

Pulled at around 3:30 at a 196 degrees for a total cook time of just over 16 hours at 225 degrees. Just finished resting for a hour.

Made the mistake (about a year ago) of ordering based on a local joint's outdated online menu...big $$$ surprise when I picked up. I understand the labor intensity & overhead aspect but seems like boutique bbq has gone a little crazy.

Austin's been crazy for a long time....

Oh yeah, i agree, restaurant overhead is high, but wow!! I do wonder if these guys are using wagyu, hand fed , $15 a lb brisket
