Traded the neighbor some beef for some lamb.

Elk shank smoking before going into the crock pot for the night. Pulled elk and elk sausage and peppers tomorrow. Happy Independence Day everyone!!!

Over 6 pounds of tomahawk ribeyes seasoned and sealed for tonight. On the smoker tomorrow for a couple hours and then into the sous vide until up to temp. Seared off on the grill before serving.

Just wrapped the pork butt. Tried something a little different for the liquid used syrup from a peach jar cut with pineapple juice sprayed and added to the wrap.

Snagged 2 for the freezer. St. Louis cut ribs were buy one get one free making them $2/lb if you matched up the weights. I have plenty already so I kept walking.

We went in on a bunch this year with a friend out of town. My wife is on board for more next year after spending a day butchering. Grocery store birds just don’t compare.
