What's on the smoker today?

Worst brisket I've made in a while. What started out as a 14lb piece of meat ended up a 6lb meal, I've never seen one shrink so much lol. Was still tasty, turned part of the lean into a brisket/bacon/green chili Mac and cheese, it's pretty amazing View attachment 317697

If that’s your brisket “screw up” you’re doing well! I think I’d take that over most brisket to be honest, that looks really good👍
 
Cheese is super easy to make. Heat up everything but the cheese, then stir in the cheese. You can make your own sodium citrate by cooking lemon juice and baking soda until the water evaporates

I'm laid up with crutches myself. Lost 10 pounds in 3 weeks pretty sure I've reversed that the last two days.

Edit- if I had to eat that quinoa shit I'd be chewing on a gun barrel for dessert.
