I let the bacon dry and equalize before slicing. Turned out well.Decided to use the last of our cold nights to make something new. Smoked a whole antelope hind quarter. Should have taken a pic of the whole thing before I carved it.
Loved it, between brockels shoulder recipe and the one you gave me for this. I don't know if I'll debone anything anymore lol. Cooked quicker than I thought, but man was it tender. I brined it and then injected with the brine before it went on the smoker.So what did you think?
