Shelter-in-place cooking

This must have been the largest Mountain Caribou in history. I shared a lot with the crew when we got home from BC. And though I've been munching on him all winter, it seems the freezer is just as full as when I pulled out a roast last week and another back strap and flatirons this week.

Grilled some pork chops. No pictures. This is twice now that I took a picture but it didn't show up! Hmm...

Sear them in a cast iron pan in butter just enough to get the skin off and pull the meat off the bones.4B3E8921-E532-48C8-BBB1-129A2EDE68D0.jpeg
Season it with your favorite seasoning, submerge it in melted butter and bake it for a bit. Throw a baked potato or sweet potato on the side. For extra cholesterol dip the potato in the seasoned fish butter.4F7220BD-9534-47BF-87C6-B560A642868F.jpeg
 
Had a little venison Oso Bucco using Rinella's recipe last night. Two of the smaller shanks turned out magnificent with the tendons turning to meat jelly. The larger ones could have gone a little longer. Overall, pretty pleased for my first attempt at it.
