What's on the smoker today?

Thinking about trying a Beef Wellington for Christmas on the Traeger. Anybody have tricks or suggestions?


Never smoked one. This is the recipe I've used. Only advice is if you have elk backstrap it's a great substitute.20230206_182221.jpg20230206_182519.jpg
 
Here is the plate.....sides are simple.....homemade butter and sour cream mash, corn, sour dough from a friend and horseradish. The accompanying stout was from the wife and it was top shelf.

First brisket I've ever tried to smoke. This is just before the wrap. 🤞
Took a little longer than expected (5 hours passed dinner), but it turned out pretty good. 16.5 hours in the smoke. Seems long for a 7# brisket.
