What is your favorite wild game meat?

Surprised to only see one reference to Aythya valisineria.

I like most of what I've had, but haven't tried near as much as you non-East Coasters and my order changes based on mood, but currently:
-canvasback
-elk
-mallard/teal/wood duck/specklebelly
-whitetail
-pronghorn
-turkey
-caribou
-Canada goose
-
-
-snow goose
 
1. Elk-mostly because of the work to get them
2. Axis deer
3. Whitetail before the rut, Indiana cornfed, free range
4. Wild hog, small, slow cooked on a wood fire BBQ

Dang, now I am hungry.
 
Normally I start with Elk, but last night I had some mallard that was really exceptional. When you nail it on waterfowl it can trump a lot of other great meats.
 
Antelope, pheasant, and land-locked Kokanee. You can't keep and eat them anymore, but Bull Trout are amazing.

I would like to try squirrel. I heard Steven Rinella say that everyone that he's talked to that's tried squirrel really likes it. But the ones we have in MT are pretty small compared to midwest ones.
 
Elk
Alligator
Soft shelled turtle
Whitetail
Antelope

Id love to try caribou and axis. I've heard from many that they are the two best game animals in North America with Eland being the best meat in the world. I suppose everyone's tastes are different. But I'd enjoy trying any of those 3.
