What's on the smoker today?

Putting a nice young goat on the smoker for the 4th, half of one at least. First for me so hoping it turns out good.
 
Got two racks of ribs headed for the smoker. I'm not sure I can hold off until the 4th as originally planned though.
 
Haven't done a goat since the beast feast in college, that one was grilled. Hoping this smoked one turns out better.
 
did nasty old antelope backstraps on the BGE today. 600* for4 min a side.... amazing like always
 
Wytex I an digging the half goat that looks great. I have a few lambs finishing up here and want to try a in ground cook on a half or at least 2 quarters. Here's some pork ribs and butt. Smoked ribs for 4 hrs, 2 smoke 2 in foil. THe butt for 9, 4 smoke and 5 in foil. Had the ribs for dinner last night and reheated the butt and pulled for sandwiches for lunch today.

I smoked a couple of neck roasts off a deer, brisket style the other day. Phenomenal.
 
A rack of baby backs on the pellet w/an extra dose of cylinder mesquite smoke. Slow/low heat 4 1/2 hrs seasoned salt only....tasty/tender/not dry.
 
16 hour smoke on an 8 pound Boston butt, with a four hour smoke on some baby backs to finish all on the RECTEC grill.... life is good ( and smoky!)
 
I envy you guys doing whole bone in legs or 1/2 a goat.

I did some venison ribs using the recipe from Rinellas cook book. Started in the crock pot for 5 hours on low seasoned with salt and covered in water. Rubbed down with the bbq rub recipe in the same book. And finished on the grill 12 minutes per side at 400 indirect heat. I intended to use a bbq sauce from the book as well but never made it to the store for a few ingredients so I used a store bought from the refridge. Overall, they are not as good as pork ribs, but pretty good!

I did some baby backs as well. 2 hours at 250 smoke on then wrap in foil and finished for another two hours. They always turn out great.
