What's for dinner?

Daughter & SIL had to go to some fancy schmantzy wedding tonight, so as the designated babysitters we stopped at Bojangles for some cajun fried chicken and dirty rice. Thrill of thrills! Worst part was they were out of biscuits and would have been an 8 minute wait, so went without biscuits. Unthinkable!

Finally decent weather here in W Wyoming, after the NASCAR race we are gonna have BBQ Chicken, Southern Style Tater salad, and baked Beans. For my beans I brown a 1/2 pound each of burger and sausage, add to 2 large family cans of pork and beans with chopped onion and green pepper, a little mustard and bq sauce to taste and bake @ 350 till almost crusty on top. Simple and good. Forcast is 80 today, at last Summer is here..
 
Last night was grilled venison sirloin with an ancho chile rub &/ baked, glazed sweet potatoes and carrots. Tonight is venison burgers and home fries.
 
Just came in from breaking the Sabbath by mowing an acre of lawn; my bride was putting the finishing touches on a pan of paella and a pot of chile verde. She must want something.
 
The wife is taking a nap so I am cooking a couple of ribeyes and baked potatoes , might throw together a quick salad . I have to work tonight (3rd shift) so I better get in gear!
 
Rotini with a simple basil and pine nut pesto, chicken poached in white wine and olive oil, and a baby greens salad. Dinner was yummy

Only mentioned the acreage because it's difficult to sneak out and cut that much without everyone in the neighborhood knowing it. Should have cut it midweek, but tied up with other things. If my Old Testament recollection is good, there's something in there about having to "get the ox out of the ditch". Well, I had to do just that..
 
Well I just polished off Swiss Steak (2010 Elk )that was put in a in a crockpot with potatoes and carrots. Man that was good.

I always joke about that scripture but usually it's me pushing my ox in the mire rather than it just being there and then I have to get it out. :)
 
Tonight's lame, tomorrows a a cold sandwich on the side of the hill, but I've got a sirloin roast off my bear sitting in the fridge that's waiting for Sunday...

Turned out awesome...

Didn't tell the whole story; I had noticed after lunch that my corn fodder had started to roll up, badly in need of water, so after lunch I wound my soaker hoses down the corn middles and gave it a good soaking, nearly emptied my rainbarrel watering tomatoes and squash even though there was a forecast of 30% chance of thunderstorms. That done I took a nap and then cut the grass. I guess my faith wasn't strong enough, 'cause 1/2 hour after putting the mower away a pretty strong storm formed up and gave us about 2" of rain and some stiff winds. This is how God punishes me when I break the Sabbath.

Randy 11 do you want my bear meat if I shoot one? I'd be more inclined if I had a taker for the meat. :D My wifey is not too thrilled about the prospect of it. I'll make sure it would only come off a 6 ft.+ bear. if that matters.:)

I like bear meat... in moderation. My one every other year keeps me more than plenty stocked :D

The one time I tried cooking some meat off an older boar it was all I could do to stomach it. One of the advantages of of killing little fat ones... This sow is really good. Best bear meat I've had.

That said I think I'll be anxious to put some deer, elk or antelope in the freezer this fall.
 
Why wasn't I invited over for that? Is that off this years or one of the other ones?
 
Randy that looks like a quality piece of bear meat!

Tonight is home made shrimp scampi with my wife's home made alfredo pasta.
 
First fish of the season... more to come this weekend, and the one after that, and the one after that, and the.... :D

Well, the wife mention lasagne, but I haven't seen it yet. Come to think of it its our night out. Don't know where we're going.

Actually, Bambistew could bring that salmon over and I'd volunteer to throw it on the barbeque. The barbeque is saturated with the smell of spring chinook already and I can't cook anything but fish on it till its properly cleaned, so someone is going to have to bring some more fish over or I'm going to have to go catch another one. Hmmm...I'm waiting...
