You got it! The whole thing is so easy and ends up delish.so the rendered fat ends up on the brussel sprouts below. It's in the @jryoung ballpark if you ask me
I like wild game but man the ribeyes, t-bones and sirloins off my son's farm raised beef is so damn good. Going to give this a try.

Leaving tomorrow a week long hunt. So we put on a big meal tonight. Lobster tail with reverse seared sirloin. Seared in bacon grease with loaded mashed potatoes and a bunch of these.
