Best fat for deer sausage

I thought I would try my hand at making some deer sticks or possibly brats. Would bear fat work or go with pork fat? Or a different fat?

I use bear trimmings and fat for my deer sausage. I try to mix it 50/50. My sausage seems to be pretty good.
 
I’ve never tried it with bear fat. I would cook a little if the bear fat first to make sure it didn’t get into anything undesirable and have any off flavors or aroma.

I normally use pork fat for sausage. I tend to do around 20% but can do more or less depending on preference and type of sausage.
 
For sausage Pork fat or trimming. If you cant find either then use a pork butt. I go no mix on my basic grind I put a little olive or avocado oil in it when
I cook it. But I think sausage needs more fat than just olive or avocado oil. Especially if your putting it in casings.

Pork loin for bulk sausage


Beef fat melts better for brats in my opinion and for bulk sausage I hate how beef fat melts in the pan so I use pork loin which doesn’t result in an inch of fat in the bottom of the fry pan
 
Personally, I prefer beef. I put it in everything I make, like burger and sausage. But pork does make a good product as well.
