Best fat for deer sausage

I thought I would try my hand at making some deer sticks or possibly brats. Would bear fat work or go with pork fat? Or a different fat?

Sticks or a brat I’d use pork shoulder.

I use bear trimmings and fat for my deer sausage. I try to mix it 50/50. My sausage seems to be pretty good.

Never had bear fat so can't comment there. For any sausage, brat, or snack stick stuff it's a 60/40 deer pork shoulder mix.

That's the sweet spot imo.

I just made some breakfast sausage with 1/3 pork shoulder and 2/3 mule deer. Turned out great.

I’ve never tried it with bear fat. I would cook a little if the bear fat first to make sure it didn’t get into anything undesirable and have any off flavors or aroma.

I normally use pork fat for sausage. I tend to do around 20% but can do more or less depending on preference and type of sausage.

I've been using 2/3 venison and 1/3 pork shoulder. Butcher-Packer summer sausage seasoning mix works well for me...always add a bit more high temp cheese than they suggest

Never killed a bear, so it's pork shoulder for our brats. Did up 50# yesterday (tried two newish ones from Excalibur) with Dad...happy, happy, happy!

I have some bear fat to try a few things with this year. But usually I'm 25-30% for brats
