I use bear trimmings and fat for my deer sausage. I try to mix it 50/50. My sausage seems to be pretty good.I thought I would try my hand at making some deer sticks or possibly brats. Would bear fat work or go with pork fat? Or a different fat?
That's the sweet spot imo.Never had bear fat so can't comment there. For any sausage, brat, or snack stick stuff it's a 60/40 deer pork shoulder mix.
