What's on the smoker today?

How do you like them fancy thermometers?
They work well, and I admit a little pricey (get the Meater 2) but the wifi works great, as the station (the bamboo part) is the base. But, with meat costs what they are...We use them for reverse sear steak and prime rib too. Never had a bad outcome, and it eliminates the wires. And for smoking, it is key. I don't like a lot of wires coming out of my smoker (Weber Summit Charcoal). Probably makes zero difference, but there's a gasket there for a reason.

Out 2 briskets were perfect; great smoke ring, tender, juicy (OK, we wrapped with tallow after they reached temp and then rested for 4 hours, kind of the Goldee's method)

Make sure to clean the ends after each smoke.
