Something along this line...Salmon grills up nice on the Traeger. Baste with some butter and cook it skin side down.
Sprinkle a little brown sugar and garlic on it too.Something along this line...

Is it even 7/4 if you don’t cook way to much meat? This is round 1, chicken wings to go on around 3:00.
Also, I need to clean out my grill. Don’t shame me.
Now you've got me contemplating throwing some wings on with my ribs...View attachment 282557

Good little warm up before the meat coma. Now you've got me contemplating throwing some wings on with my ribs...
I let it get up to 170 and wrapped it. Kept it low and slow in the paper and just pulled it off at 203. Probe felt like butter, so I'm hopeful. Kid should be home from a "boat parade" in two hours, and he is excited for dinner tonight. Tried rendering the trim fat for the first time. Not I gotta figure out what to do with the tallow!Color's looking good. You gonna wrap it to get past the stall?
Good problem to have. Throw a lid on it and keep it in the fridge.I let it get up to 170 and wrapped it. Kept it low and slow in the paper and just pulled it off at 203. Best problem. Anytime I trim brisket I grind it and smoke it it. The smoked tallow is my favorite thing to use with wild game which is so lean and always seems to need extra fat.Good problem to have. Throw a lid on it and keep it in the fridge.

Just went on the smoker. The Fresh Market had cryobags of “prime” pork ribs for $2.99lb. I regret that I didn’t get photos of the marbling. It was crazy for a baby back.
USA! USA! USA!!!
I usually save my trimmings for sausage making, but I need to put tallow making in the list.Best problem. Anytime I trim brisket I grind it and smoke it it. The smoked tallow is my favorite thing to use with wild game which is so lean and always seems to need extra fat.

Wrapping and back on for another 1-2 hours. Looking forward to a meat coma in time for fireworks.
