Will stuff and cook in oven tomorrow. I need to build a smokehouse once we move to our dream home but for now the LEM recipes will do

I just made a batch of summer sausage last weekend. So good.

Still working on it but finishing up. I won’t use those mahogany casings again, didn’t like them and two busted on me.

They came out kinda ugly but that’s ok, so am I. My solution for the busted ones was to cut in half and throw in a ziplock then into the ice bath. Still not bad for only my second time making summer sausage.

Looks good, just finished some jalapeno cheese sticks the other day myself. Careful not to put one that you've probed into the ice bath either. I've tried it either way and I've never noticed a significant difference with the ice bath. Of course this time a year it's cold enough outside I just leave them out for a couple hours. Ymmv

I threw the probed one in but the probe was still in it so I could watch the temp, it’s the shortest of all of them so I’ll be able to keep track of it. It’s rarely cold enough here unfortunately.

I think I want to try snack sticks this summer.
