Shelter-in-place cooking

Just out of curiosity what does moose taste like? Anything like elk or antelope? That roast looks fantastic. (y)
We had some friends over for a blind taste test and we all failed trying to tell the difference between grilled moose, sitka blacktail deer, or caribou (all grilled backstrap pieces). We did the same with sharptailed grouse, spruce grouse, and duck breasts...all dark meat birds that tasted the same grilled. Moose and elk taste similar to me, but I do not have discriminating taste buds...they all taste good!
 
Same here, I dont care for liver....liverwurst though, rye, mustard, sliced onions and munster....yes


This is almost exactly the sandwich I always remember my granddad eating. Would you mind sharing your recipe? I'd love to make some to share with him (assuming I get a deer or elk in the next few years)
 
Whitetail liver and onions. I have never soaked in lemon juice to reduce blood/heme taste, but followed Hank Shaw suggestion. Next time I will slice the liver thinner and come closer in texture to the adjacent bacon.

My oldest daughter is staying with us for a few days, so we took Finn for a trail run and now it’s sourdough biscuits and bacon.

Whipped up a “hunter’s pie” last night. Basically shepherds pie with ground venison instead of ground lamb. Leftovers made for a good lunch today.
