Peel potatos, cut up small put in a pan water ,Cook till soft
Add Johnnies season salt while cookng and you have to taste a few times and add more salt to get to your taste you like.
then when potatos are all cooked add some velveta and shredded cheddar cheese, till it's thicken a cheese soup consistancy.
I also add some carrots and celery.
It's very good as it doesn't have the chicken broth for a base.
I making it for Wed. night dinner.

That's about the same way I make it - saute onions and celery in a little butter (or cook with chopped up bacon) until they start to turn clear in a soup pot,
peel and cut up the potatoes (about potato salad size), barely cover with water and boil until starting to get soft. Add seasoning, one big brick of Velveeta ( 2 pounder) and some evaporated milk, if desired.

You can add variations - like chopped up ham, green onions, a dab of sour cream, etc. My girls ask for this one a lot!

do you drain off the water before adding the cheese or just leave it in there. i always thought the idea of cheese soup was sick but one try made me a believer
