Plate ‘em up

Dinner tonight....medallions of whitetail loin cooked in butter and garlic in the cast iron, roasted Brussel sprouts with balsamic and bacon, onion and portobello brown gravy and roasted potatoes. Wifey (who usually doesn't go for deer) was a clean plate club member....yay!!

Had wagyu seared on a Himalayan salt block the other night. No pics but was hands down the best tasting I’ve had.
Sounds amazing! This thing is 12 lbs, so I’m going to partially thaw it, cut it up into individual 8oz servings, revacuum and refreeze. Should get 25 good servings from it, so plan to experiment a bit with different ways of cooking it.
 
I suck at gluten so I've shied away from Hank Shaw Bierocks recipe....dumb. it's easy and friggen awesome.

When you tweaked the filling, were those in addition to hanks cabbage, sauerkraut, vinegar, beer or in lieu of?
