Didn’t get a photo until the end, but I made white bean chili out of the front shoulder of a wild hog and some hatch chiles that I fire roasted. Turned out pretty tasty for winging the whole thing.

So how big of sheepshead do you eat? We catch them on Erie and everyone considers them a trash fish but recently I heard they are good to eat. Said had to bleed them out. What would you say it compares to?
