Plate ‘em up

'cado toast gets a bad rap for some reason. I disagree. Great meal. Add a little blue cheese or feta if you're feeling frisky. And a good hot sauce.
I had about 1/4 of a Calabrian pepper leftover that I sliced up and put on it. Lower end of that pepper was average heat, but the seed/vein part at the top that used this morning packed some good punch!
 
Wild hog (approximately 125# sow)
Parts of the hams (trim off fat)
Dry rub consists of
Salt
Pepper
Dried oregano
Cummin
Chipotle powder
Brown sugar
Apply dry rub, place in pot with chopped onion and garlic cloves. Cook for about 10 hours on 250°.
Falls apart, put on flour tortillas with pico, cheddar, homemade guacamole, cilantro, sour cream, lime. Delicious!
