venison tartare is great - have made it with deer and moose

shanks are something most folks don't use

love bulgogi, no matter the red meat variant (beef, venison, etc)

I’d be in for the shank recipe. Have four thawed in the fridge for tomorrow’s supper.

Grilled bacon-wrapped stuffed Axis tenderloins (jalapeño cream cheese), corn, and Brussels sprouts. So good.

Plus, a weekend at my deer lease alone. 1000 acres all to myself.

I'm not real sure if this belongs here or not but here it is. Dill pickled green beans with wild onions, garlic and a small jalapeño.

this however does belong here. Made a pesto out of wild onions and basil from the garden. Marinated teal breast and some venison loin. The venison was better than the teal with this pesto.

Scallops have been bad the last 3 years but were trending up last season as far as numbers. Hoping this year is a "decent" season.
