My wife spent last week in Puerto Rico. She remarked how good the cuisine was. I did a little Google fu and found some Caribbean recipes to try. This was the first, using last Fridays bounty.

I made my own adobo and sofrito. I couldn’t find the right chile peppers so I substituted Anaheims.
