This may be an odd request, but I figure it's bound to generate some answers for me.

My wife and I recently welcome our first baby into this world, a husky baby boy. I have been looking for some books that contain short hunting or pretty much anything outdoors related stories. Some of my fondest memories from growing up were sitting by a campfire or inside by the fireplace while my grandpa and great uncle read me stories.

I'm currently sitting in a Barnes and Noble typing this while looking for something but I have a feeling someone from Hunt Talk is going to be able to provide me with far better material than I am able to find here.

Open to any suggestions and advice

Congratulations on your son.

The first book of short hunting stories that popped into my head was Howard Copenhaver's, They Left Their Tracks.

Copenhaver was an outfitter in what is now the Bob Marshall/Scapegoat country. He has a few books of short stories but I believe this was his first one. It's basically a collection of hunting-centric campfire tales. Some really good ones too. Copenhaver had a life and career that allowed for a lot of storytelling practice, and he became very good at it. If I recall correctly they are probably all appropriate for kids, though you may want to read the stories ahead of time to make sure they are up to your own standards when it comes to that metric.

The Clever Pheasant by Eischens and Lost in the Woods by Sams and Stoik. I have read the pheasant one a hundred times or more to my boys. there is also a fishing book about Johnny, but I couldnt find it.

Rascal by Sterling North
the Old Man and the Boy by Robert Ruark
Two Little Savages by Ernest Thompson Seton
My Side of the Mountain by Jean George

All books I loved as a kid and still pretty much do...

Jim Zumbo has a set of books, I believe they are To Heck with Elk Hunting, Deer Hunting, and Moose Hunting. All three will cause you to laugh as you read and you can't put them down.
Also anything by Robert Ruark, and Donald Thomas is excellent also. Don't forget Capstick and I guess when I was a kid anything by Jack Oconnor, like Robert he always held you waiting for evening to start reading again.Crap Meat eater is great also. To Many to choose have fun beats the hell out of electronics.

Each of our grandkids loves to visit Yellowstone Park and observe wildlife, beginning with their traditional "five-year-old trip" to earn a Junior Ranger Badge. The book they each got excited about is "Who Pooped In The Park" which describes and illustrates wildlife scat. I have found that introduction to wildlife is a good start to learning about hunting and its whys and wherefores.

Must have, The Bears of Blue River, by Charles Major.
All time best book about hunting to read aloud to kids,
Good times coming at your home!
