We hit CDA annually as the wife’s Lyme doc is there, always includes at least one trip to Meltz. I always opt for the Oinker or the Border Patrol but the Mrs has found her go to on the “secret menu” with the Briqueso (sp?) off their secret menu. Good ol gut bomb stuff right there👍🏻

This beauty is made with made with Meltz's house-made Herbed-Almond Pepper Jack Cheese, White Cheddar, Brie Mousse, Roasted Artichokes, Caramelized Onions, Tomato Pesto, and more, all on delicious gluten-free bread.

Butter. “Fake cheese”… American.

But… I like wheat bread.

Ham is good sometimes, but then it is a hot ham and cheese sandwich, not a grilled cheese. Sometimes it will use different cheese with a hot ham and cheese, and sometimes I will add mustard, but the butter and wheat bread stay the same.

I usually do the ultimate and add grilled chicken and/or bacon.
 
Olive oil on the outside,mayo on the inside with smoked Gouda cheese on Dave’s killer bread
 
What's with putting a bunch of other stuff on a grilled cheese sandwich and still calling it grilled cheese? The only thing between the bread in a grilled cheese sandwich is cheese. Although, perhaps delicious, all those others are just some kind of grilled sandwich that has cheese on it. I love a good grilled tuna sandwich sometimes and on occasion I'll put a slice of swiss on it. It's still a grilled tuna. It didn't suddenly transform into a grilled cheese sandwich that has tuna on it. Cheese is an ingredient on better than half the sandwiches out there, but we never refer to those sandwiches as cheese sandwiches. Nope, the only time cheese gets full credit is when cheese is alone in the sandwich. If you only have one other ingredient, then cheese can share credit, like ham and cheese, bologna and cheese or cheeseburger but that's it. I guess cheeseburger can have other ingredients, but "cheeseburger" was just a fast-food marketing ploy anyway.
 
I think the cheese doesn't matter much. Just what ever looks good at the time. Butter is best but mayo if I'm lazy/in a hurry/out of butter.
There is good american cheese out there just not in the plastic wraps.

I have been in Coeur d Alene for 5.5 yrs and haven't been to Meltz... It has been on the list of places to try but just never end up there. It is probably less than 2 miles from my office so no good excuses.
 
Butter, but only if I don't have any fat from a roast chicken saved in the fridge so that it gets the flavor of the garlic and rosemary. Pepper jack cheese. Cast iron skillet.
