Leaving on the 15th for a week of chasing elk and I'm looking for ideas for easy camp meals. Post up your favorites!
 
I like taking already baked potatoes, that way it doesn't matter if they freeze.
Pre cooked taco meat, or burger depending what you like. One less step!
Precooked bacon, can put it on the grill to heat up, no mess
Frozen breakfast sandwiches like chicken and biscuits or sausage. Put them in the grill or woodstove, quick and easy for morning.
 
First night or two is almost always tin foil dinners thrown into the fire.
After that it is precooked meals like the above. Grilled steaks, chicken breasts and pork chops. I put seasoning, butter and sauces in before sealing them up.
I boil a bunch of eggs before hand as well.
 
Pre-made breakfast burritos. Wrapped in foil so just throw them on the grill or stove to heat.

Pre-made everything. When hunting season approaches, I will often throw a couple servings of leftover whatever dinner I made that night into vacuum sealed bags and freeze them to take camping. Lasagna, casseroles, enchiladas, pasta dishes all work well. Then just heat in boiling water bath and dinner is served. Nice to have home cooked, hot food after a long day without the work or dishes.
 
I always do the boil-a-bag thing. Make sure you double seal each end - nothing worse than having a bag come unsealed while heating.

Favorites this year was kahlua pork and rice, pizza casserole, red beans and rice, shepherd’s pie, and beef pot roast.
This is the way. I went to our favorite Mexican restaraunt and got a bunch of burritos this year, even froze the green sauce cups and sealed them. We also did enchiladas, lasagna and chili. Whatever you can heat up and dump onto a plate. Saves so much time.
 
My buddy killed a nice doe last trip to camp so I made an iron skillet heart & tenderloin shepherds pie.

Cooked; celery, onion, carrots, mushrooms, corn, diced deer heart and tenderloin in iron skillet
Added a can of mushroom soup to make a nice pot pie type filling, simmer till everything is done.
In the iron skillet, topped the works with mashed potatoes leveled out smooth, then put under the broiler till golden brown.

The two of us ate the whole thing.
Can substitute biscuits in lieu of potatoes and bake rather than broil as another good option.
 
More of a post-hunt ritual but a camp meal all the same-- traditionally for the first meal after a successful hunt, my father and I slice a venison heart and liver paper thin and then sear over a screaming hot cast iron or open flame, with a sprinkle of Worcestershire on each side. Cook to no more than medium rare.
 
I often do smoked sausage or hot dogs one night. Fully cooked so just need heated through. I normally keep some canned soup for something quick that can warm me up if it’s a cold rainy/snowy day. Past that depends on time of year and how motivated I am.

If doing pre cooked vacuum sealed items as others suggest watch your food handling. Make sure food is completely chilled before packaging and keep it cold or frozen until cooking. I always get a little paranoid with it.
