Got him butchered up last night. Took right at 3 hours.
Ended up with 26 pounds of steaks and roasts and 38 pounds of burger. I did add 5 pounds of beef fat to the burger.
I weighed my trim pile with the scraps of fat and silver skin I cut off and that was 11 pounds.
So boneless meat before trimming would have been right at 70 pounds.
I always use the 1/3 of boneless meat before trimming as my guess for live weight so that would be 210 pounds for live weight. That seems about right based on having him on the ground and seeing his body size in pictures.
Pretty big for a Texas deer in this region. I’ve shot a few that have yielded 60 pounds of boneless meat before trimming which would be about a 180 pound deer and I’ve actually weighed a few when I had the tractor available and they were in the 170 to 180 range and this buck seemed bigger.
Going to get some teeth ready to send to the lab for aging this weekend.
