A person saves a lot of money doing it themselveson doing this your self and time frame.. I have been working on my moose all week. One night, one hind quarter. Cut into roasts, steaks, cubes and trim. wrapped steaks and roasts into butcher paper and ziplock cubes and big ziplock for the trim. 3.5 hrs.......I'll have 12-15 hrs into this bull by the time I'm done. Doing it all by myself as well. Stubborn and cheap tends to lots of work, but the quality control is there....
