Love toffee. i make a pile of almond toffee that is as good as Enstroms famous version. Makes great gifts. Butter separating is often just cooking a tad too fast/hot. REALLY have to be patient with the cook to avoid butter separation. Turn your heat down some and let it slowly get tot he right...- Khunter
