Prime rib for us.

Insta-pot elk shank Osso Buco, fresh Gremolata, brown butter mashed potatoes, and biscuits for Christmas Eve (and wife's birthday) dinner. Twas delicious and will definitely be a repeat.

I picked up a Prime rib roast and a New York strip roast. I've been favoring the New Yorks lately , less waste and I like the texture better. It also slices much cleaner the following days for sandwiches or god forbid.."grilled cheese" protein topper. This is a New York in the pics.

Seperate rant, I'm tired of paying these prices for beef just to trim 2-3 lbs of useless fat off before I smoke them. Any fat cap over 1/8" thick should be removed by the butcher instead of being sold at prime prices.

We were supposed to have my dad's side Christmas here tonight but sick kids took care of that. We refroze most everything except for these. That platter was full about 15 minutes ago...why don't we eat this more often.

The GF was gonne for a week a little while back. One night supper consisted of a shrimp ring and coconut shrimp lol
