Off topic, but how do beef chuck roasts fare in a smoker? mtmuley

Pretty good imo. Supposed to be poor man's brisket. But whenever I've done it it's been more like pulled beef, kinda falls apart. Still damn good though.

Agreed, pretty good, especially for chilli or sandwiches.....with sauce.

I want to try smoking a couple over a pot of chili.

That's what we do, pulled beef sandwich. We usually have about 8 of them in the freezer from our beef. Can't remember the last time we did it in the slow cooker anymore.

I like it in a thicker chili Colorado, but it may be a bit stringy for other chilis

Chili colorado is on my list of things to try. Even though it sounds like something out of the urban dictionary. Lol

As far as deer and elk shanks go how much would you say they yield after the cook? Looking at the forecast I think I might as well.

This is one front bull elk shank, braised 5 hours, enough carne adobada tacos to feed maybe 6 hungry adults...it tastes so much better than brisket.
