The wifey made something with a roast the other day that was out of this world. Kinda like shredded brisket sandwiches. I have no clue what it was but it was gone fast. yep. wild game roasts smoke splendidly and deliciouslySmoke it to 130, then reverse sear it in cast iron with bacon grease.
@Bambistew has a dynamite roast recipe as well.
