Total take home meat weigh it before adding fat to burger. Started at 44lb and ended with 22.7lb.

36.4 lb included all of the bone and rind that was not getting turned to burger.
All said and done I’m very happy with how it turned out and the whole process. Can’t wait to cook the first one up!
We have only had one set of steaks so far. Saving them for special occasions. They are very unique and tasty. The initial flavor is pretty similar but there is an after taste that is to die for. I don’t know how to explain it but the flavor just kinda hangs there.Did I miss how it turn out ? Was it worth the wait ?
Corrected it for youAll that to say if I only shot one elk I would probably not do it because of the meat loss. Butifwhen I have another banger like last year with a whole family of elk I will absolutely do it again. Even though packing out a bone in hind quarter over a mile goes against my personal rules
