And @Dave N, every time I see a photo of an omelette, I start thinking, “What is in my frig that would be good in an omelette?” Of course, with the current price of eggs, I can only afford a one egg omelette.

Is that your fleshing beam attached to the wall? If so can you sit while fleshing? Built a stand for mine I like it but wish it was more adjustable.

I eat 3-5 eggs daily 5 days a week !!!! Teach your children to hunt and you will never have to hunt for your children. My Dad taught that to me and I taught it to my kids. Congratulations to you and your BIL.
It is. I’ve never tried sitting, but it is probably adjustable enough to do that if you wanted. I usually stand up and use my hip to hold the pelt in place.
Mushroom, onion and smoked cheddar make a tasty omelet.
