I’ve seen this one years ago. Good stuff.

How long would it take you, from hanging to dropping the last package in the freezer, does it take you to process a deer?
 
A few hours. Less if its all going into the grinder and I dont cut steak and stew and jerky and canning and fajita cuts.

Having a place that’s set up to take care of an animal properly makes a difference. I’m wanting to do more of my own processing, but it always seems like I’m too busy!
 
You're teaching them boys right. But I gotta say, tossing all those bones seems a waste. Toss them in a pot with mirepoix and maybe some of that extra trim that you're not planning on using for a grind and baby you've got a stew stock goin! I bet you could make a mean sheppard's pie with venison stock. Regardless, as someone who has never broken down a whole animal, this was great.
