Was able to land a few of our Southern Nevada stripers so I made some fish and chips.
Fish Prep
Flour
Salt
Pepper
Paprika
Breading
Flour (used twice)
Beer or Soda Water
Salt
Sugar
Baking Soda
Mix the breading stuff besides egg whites. Whip egg whites till stiff then mix with batter. Do this a couple hours before using and refrigerate. Should be slightly thinner than pancake batter. Cut the fillets into the size you want and season with salt. Let it sit for an hour or so in the fridge so it firms up. Mix all the fish prep stuff and coat the fish. Shake of any excess flour. Should just be lightly floured. Fully submerge fillets in batter then lift out and let the batter drip off till it’s thinly coated. Put the fish in hot oil. Either deep fry or shallow pan fry. If you shallow pan fry, spoon the hot oil over the side that’s not in the oil to start sealing in the fish. Only takes a couple min per side. I severed mine with fries, home made tartar sauce, and mashed chili garlic peas.
