Sausage season

After people snacking during the super bowl and what my niece and brother took home this is about half the jerky and snack sticks from this weekend. Orginally was 5lb jerky with orginal high mountain seasoning and 10lb of sticks with half orginal half cracked black pepper.View attachment 360293
I love that cracked black pepper blend. That’s what I used for my bear brats and they were phenomenal.
 
Well another day snowed in and another 25lb of sausage down. Tried a new bratwurst seasoning from Excalibur called "Pineapple bratwurst". Well it tastes like a bratwurst but neither me or my wife can taste even the faintest hint of pineapple 🤷‍♂️. Still on the agenda 25lb of cured garlic smoked sausage, 10lb bologna, 10lb salami, and 10lb pepperoni.20250219_201137.jpg
 
I made some goose sausage a few weekends ago. It mostly has tarragon and dried apricots in it. I dont think it turned out too poorly, but I probably wouldn't be super pissed about a dog stealing it.
I also made 50 lbs of duck/goose breakfast sausage. half stuffed half bulk . 25 lbs Harveys pork sausage 25 lbs pancake butter ps seasonings. They both will be gone in short order. Kids want them for breakfast and dinner

That sounds much better than what I made. Did you use any moisture binder or is the half pork mix good enough?
