Yep, like Dave said; it’s Cajun sausage. Traditionally made with boiled pork liver, Cajun seasoning and Cajun rice. I have a whole cooler shipped up about twice a year. It goes well with elk steak

Do it! I put some fresh thyme in the biscuit dough. That would go well with squirrel too.
