Plate ‘em up

Made three recipes last week with some cottontail and chukars.

Pan fried (chicken-fried)
Pan-seared with raspberry-balsamic pan-sauce.
German Rabbit stew- with sour cream and lemon

The chukar were best pan-seared, since the breasts liked to dry out otherwise. The young rabbit was best fried, same with chukar legs. The old rabbit was best in the stew. Overall, three great recipes that are on the slate to be repeated.
 
Back home from Minnesota and had to go the quick and easy route. Hand pounded breaded pork tenderloin. Slightly hungry so I made it a double. Cheese, onion and lettuce for filler. ;)

What was your breading recipe?

Growing up in Indiana, along with sugar cream pie, breaded tenderloins are our national dish.

No cheese, no lettuce, no onion. Only pickles and mustard allowed.

Your sammy looks incredible though!

I seasoned them with Nature Season before the egg wash and just used panko bread crumbs. I wrap each one in plastic wrap and freeze for later. This one as usual had jalapeño mustard on it also! Forgot about that!
