"Watermelon" pizza. No luck finding morels tonight, but did score a dryad's saddle, which I grated and sautéed. The flavor is somewhere between watermelon rind and cucumber.

Never cooked mahi mahi. Made 1st recipe that came up on Google search and the Mango salsa of another on the side. Butter garlic green onion and lemon zest with little wine and olive oil and good amount of Kosher salt. Really gave something to the fish. Wife who has been vegetarian since I went away on AZ hunt last fall, (guess it could have been something worse while I was away) ate a bite and kept eating.20210513_125440.jpg
