That sounds delicious with shanks!Did a bunch of street tacos couple days ago. Besides the regular strip steak fajita meat I also did deer hearts and shanks. Cubed the heart and diced peppers and onions then marinated in claude's fajita marinade and cooked in cast iron skillet. Smoked the shanks for a couple hours then simmered in a pot of half enchilada sauce and half beef broth for 4 hours.View attachment 217123View attachment 217124
