Tonight went pretty quick. I actually started on the first hind right before dinner because I forgot to thaw some steaks. 2 weeks of aging on this old cow. One of the best elk I have ever eaten. She was huge, dry, and ivories were almost gone. That was one of the best elk steaks I have ever had. The easiest way to describe the meat is almost loose. The grains were not tightly packed. I even noticed when I was cutting her up. Almost hard to hold the meat as I cut because it would shift around.

Garage Freezers are almost full but there are at least thirteen 15+/-lb bags that I need to grind at some point. I will need to start using the 1/2 chest freezer when I start grinding.

The fridge is empty for now.

Sometimes, that’s my life story! Still waiting on a 300+ class bull, but the freezers are full! 😁
Yep. I have said it before but I would be perfectly content never shooting a 300”+ bull. That’s not why I hunt. My antelope this year is within an inch of b/c but it doesn’t mean anything more to me than any of the other antelopes I have shot.
