My squirrel stash in the deep-freeze was getting out of control so I decided to make something different, but familiar.
I whipped up a traditional pot pie preparation substituting squirrel for chicken.
Instead of using a traditional pie crust I made a puff-pastry cup, added minced mushrooms (duxelles) a choice piece of squirrel, and a dollop of local goat cheese. I served these alongside the pot pie mixture, and couldn't be happier with the result!
Certainly not a traditional preparation but a HUGE hit!
