I personally think Sandhill crane breasts are the best tasting and best textured meat out there. I believe comparing it to a rib eye is doing the crane a disservice.
They are also amazingly fun to hunt. This last year they came in with a fog bank and would seemingly materialize at 60yds or so. The sound of a large flock is somewhere between amazing and comedic.

Side note.
In a recent blind taste test among 10+ friends it took second to blacktailed jackrabbit back straps, but easily beat out Coues back strap.
Of the 10 people...
3 had never eaten deer, hare, or crane.
3 or 4 had never tried hare or crane.
