Personally, I'm a big fan of the Rainbow subspecies of the sub-continent of India. My bucket list hunt is a mixed bag of Tiger, and Rainbow Squirrel.

Taiwan has 2 species of very large flying squirrels that are super cool, and Pakistan and Afghanistan have a humongous cliff dwelling flying squirrel if I recall correctly.

Edibility of all is unknown.
 
This list is based on “thrill”, weapon limitations, and variety of terrain that would make these all deadly hunts:

1. Louisiana Gator - +12’ - Snagging/bow fishing tackle
2. Arizona Mountain Lion - Hounds / Longbow/ Dry Tracking
3. Alaska Kodiak Grizzy Bear - 44mag Revolver
4. Texas Wild Hog - Hounds / Knife, 400+ lbs, night hunting only
5. Yukon Bull Moose, late season Archery

Africas Big 5 has always been an equal opportunity trophy hunt ---Male or Female--Elephant, Rhino, Lion, Leopard, Buffalo--even the dangerous 7 does not discriminate ( Croc and Hippo ) In fact, this may surprise many of the men on the forum, but the female can be even more dangerous than the male under certain circumstances-----ESPECIALLY--if a male is "trophy " hunting ;) ( therefore eliminating the "Bull" from the first post--no pun intended )

Hunting the Big 5 in Kenya (back when hunting was legal there) required the use of a professional hunter (until one "proved up" by taking a qualifying number of the species in question). It was due to the "danger" in hunting the predators and the large herbivores.

SO, if we were to apply the same qualifications of needing a guide/professional hunter, then the list must include some of the listed critters suggested by other posters, but we must also include any/all creatures hunted while a non-resident in any of Wyoming's wilderness areas. Up to and including bunnies, grouse and coyotes.
