Elk heart?

I can't really speak to elk heart, but I've actually used a cornbread stuffing recipe with apples, celery and fall type flavorings, with a deer heart. Wrapped the whole thing in bacon, sitting in a small amount of beef stock. Turned out amazing and the kids and wife ate it all up, till they figured it was heart... But by then it was mostly gone. Key with this, like most.... Don't over cook
