Stir the waffle mix up with beer instead of water...kind of like the way you make beer batter for fish. Smother it in some butter and some Mrs Butterworth's and a side order of smokey links and you'll be set up!

Rogue!!! Water in waffles?????? Yes I may have abeer with my waffles; you see the alcohol tends to drive my glucose level down so I need to offset it with something that contains sugar. (Usually I have beer and donuts!)

Right Paws...most of the mix stuff calls for water! Yuck! If beer isn't available, I use milk instead. Don't even worry about having to pack the milk in, I'm a big boy and will pack the milk gladly just so the waffles will be edible! I tried it with the water and they turned out rather nasty! You couldn't even flip the son of a guns without them disintegrating. Also I usually add one real egg instead of depending on the powdered ones in the mix to glue everything together.

Hey...what can I say, Phil...it was a backpacking trip...so I was conserving time, space, and weight...so I thought...came in it's own little shaker bottle. All you were supposed to do was add water, shake, and pour it into the skillet. That's when it really got ugly. Ended up looking like some kind of weird scrambled eggs made from powdered eggs! By then I was hungry and didn't care...I just poured some honey over the mess and ate it anyway. I have a theory...no matter how bad something turns out, if you smother it in honey, salsa, or cheese...depending on each case scenario...people will eat it anyway.

Not the best recipe but back packable and tastes good. Mix up all your dry stuff in a ziplock bag first. You can get dry reconstitutable buttermilk or just put it, the wet sltuff, in a sterilized container with a tight lid.
You can keep fresh eggs up to a month out odf doors.

1/2 Cup All-purpose flour
1/2 Cup Whole wheat flour
1 Teaspoon Granulated sugar
1 Teaspoon Baking powder
1/2 Teaspoon Baking soda
1/2 Teaspoon Ground cinnamon
1/4 Teaspoon Salt
1 Cup Buttermilk
OR
3/4 Cup Plain yogurt
PLUS
1/4 Cup Water
1 Large Egg
2 Teaspoon Mild olive or vegetable oil Oil for cooking Griddle, large skillet,
Or waffle iron

Food processor method: Put the flours, sugar, baking powder, baking soda, cinnamon and salt into a food processor. Process briefly to mix. Add the buttermilk, or yogurt and water, egg and oil. Turn the machine on-off (pulse) 3 or 4 times to make a smooth batter.

By hand method: Put the flours, sugar, baking powder, baking soda, cinnamon and salt into a large bowl. Stir to mix well.

Measure the buttermilk in a 2-cup glass measure. Add the egg and oil to the measuring cup. Beat with a fork or wire whisk to blend. Add to the flour mixture and stir to form a smooth batter.

For pancakes: Heat the griddle or skillet over moderately high heat until it feels hot when you hold your hand directly above it. Lightly grease the griddle. For each pancake, pour 1/4 cup batter onto the griddle. Cook 3-5 minutes, until bubbles appear on the surface and the undersides are golden brown. Adjust the heat if the pancakes are browning too fast. Turn the pancakes over and cook 1-2 minutes longer to brown the second side.

For waffles: heat the waffle iron; grease it lightly. Pour in the appropriate amount of batter and spread to the edges. Close and cook until the iron will open easily.

Keep finished waffles or pancakes warm in a 200'F. oven - pancakes on a plate and loosely covered to keep moist; waffles directly on the oven rack, uncovered, to stay crisp. Makes 8 4" pancakes. Serves 4.

Thanks, Paws...I'll have to try that one. I should have known better than to trust that other mix...brand name was "Krusteez." Sounds like something left on the bus seat by "Krustee the Clown."

Hey Paws, what is your best receipe for waffles, the wifey loves them and we just can't seem to come up with a good goo mix to make them like we have had them in some of the nicer establishments we have been in...
I also tried to send you a PM and it wouldn't go thru any more. Maybe you could send an e-mail since that part of your world isn't working on the board any more either... :(
I have been out of town for the last few day's so couldn't get to your last one soon enough... Russ...
