Star hotel is awesome...Not sure if it's still there, but the Star Hotel in Elko, NV has the best steak sandwich on the planet. It's a Basque place, there are several others across northern NV. If you ever travel that way you have to find and Basque food.
Starvin Arvins in Grand Junction and a couple other nearby towns has awesome breakfasts. Famous biscuits, green chile, you can't go wrong with any of it.
I go a little crazy when I travel to NM, there are countless fantastic food places. Probably my favorite is in Taos, the Ranchos Plaza Grill has the most amazing red chile. Barelas Coffee House in ABQ is equally awesome.
Also for breakfasts, Hash House A Go-Go in Vegas is something everyone should try once. If you know, you know.
