When you say chops, what do you mean? I usually cut my backstraps into 5 or 6 inch sections. Smoke them low until they reach 110, then sear on the black stone to get them to medium rare. Nah nothing that fancy I usually do the exact same with mine. This time I took one of those pieces and cut 2" thick pieces like a filet mignon then wrapped bacon around the outside edge.When you say chops, what do you mean?
