    Tip of the cap to the venison philly sliders. Easy and absolutely delicious. For the non game eating foks just swap the ground venison for ground beef and it was also a hit.

    Percentage of fat in ground meat

    If we're making sausage I'm typically 20% pork fat. This year we bumped it to 30% and the family preferred it, but I feel like it loses a little of the spirit of the wild game. Ultimately anything works if that's how you like it!

    Room for improvement but my recent batch of venison fennel sausage. Went on the high side with fat and added 30% pork fat since the extended family thinks anything less than that is a little dry. I'd argue it's how they cook it but I obliged.

    I am a late discoverer of the series but have been binging non stop. Don't know what took me so long to find it but thankfully the Fresh Trakcs vids started popping up in my youtube algorithm. Love Randy and love watching the hunts.
