    Cabela's sold ??

They just opened a store in Huntsville, AL. It is only about a quarter mile from my office, so I spend at least three days lunch break a week there. I was really looking forward to being able to "showroom" many of the gear items and apparel from my wish list. No dice. Most of the items...

    Biased Elk Shoulder Roast

Cooked for the wife's boss yesterday. She said he had heard the "big dead elk" story enough and wanted to try some. I am out of shanks, and am down to the last few precious steaks, so I decided to make a braised shoulder roast. Cooked this using Hank Shaw's osso bucco recipie, and served...

    Alabama BHA Chapter

Fellow Hunt Talkers, I am in the initial stages of forming an Alabama state chapter of the Backcountry Hunters and Anglers, and am working to get the work out across as many platforms as possible. I know there are a few AL members of the HT community, and I am hoping this will get some looks...

    Hunting the holidays

My take is this: I will never, ever take for granted sitting with my family on a holiday and spending real quality time with them. They are the most important thing, period.

    Weyerhauser for Access?

In MS we had to lease Weyerhauser land....no open access rights. It became a bidders war and the price was starting to put many of the clubs out.

    Quick Elk Sloppy Joes

We have been working really late saving up our time off for an extended vacation this fall, and needed a quick meal tonight. I decided to make sloppy joes with some ground elk, but failed to have the meat thawed prior to starting. This meal went from freezer to plate in about 20 minutes, and...

    Recommended Reading ?

Criteria: light, paperback, lots of pages, holds attention. If I had to read one fiction book that fit this criteria the rest of my life over and over again, it would have to be Without Remorse by Tom Clancy.

    Elk Backstrap

I have been hoarding and coveting the backstraps all year, not wanting to break them out because I didn’t want to use them up too soon. Man, was that dumb. Tonight, we had backstrap grilled using Hank Shaw's method here: http://honest-food.net/2011/08/31/grilled-venison-loin/ The butter...

    Best Bourbon???

I classify these premium bourbons in the $30-40 range as excellent value whiskeys, based on the market right now. Currently, I have these as top of the list: 1. Four Roses Small Batch - my favorite out there right now too, from a value side at about $31 a bottle. 2. Eagle Rare - $32 for a 10...

    Elk Rib BBQ

Osso Bucco was one of our favorite things to make with the shanks over the winter. I was thinking the other day, minus the steaks we have eaten from the bottom round I carved, we have only eaten the tradtionally "less desierable" parts: shanks, ribs, grind scraps etc. No roasts or tenderloins...

    Elk Rib BBQ

That's right. These would be equivalent to a beef short rib. I did trim off one layer of skirt meat to make stir fry strips with, but what you see is the pic is what was on the ribcage after complete butchering. These were the last portions I cut up prior to carcass disposal.
